Tomato Basil Goat Cheese with Balsamic Vinegar Tomato Sauce

Tomato Basil Goat Cheese with Balsamic Vinegar Tomato Sauce 

Full of fresh flavor and great to take to a party. Serves 6-8. 

3 cloves garlic, crushed

2 tbsp. butter

¼ cup chopped green onion

3-4 chopped ripe plum tomatoes

¼ cup red wine

¼ tsp. salt

¼ tsp. pepper

¼ tsp. dried oregano

½ cup chopped fresh basil

4 oz. goat cheese (plain or flavored)

½ cup fresh whole basil leaves

¼ cup balsamic vinegar


Sauté garlic in butter until soft and fragrant then add chopped green onion. Sauté for I minute longer.

  

Add tomatoes, all seasonings and the red wine. Simmer until most of the liquid evaporates and it is a thick sauce-like constituency. (15-20 minutes).

  

Spoon tomato mixture onto a serving platter and top with the goat cheese and basil leaves. Pour the balsamic vinegar over the cheese.c Serve with thin toasts or crackers.
