Red Pepper Turkey Burgers with Sautéed Mushrooms 

Red Pepper Turkey Burgers with Sautéed Mushrooms 

Great on the barbeque or broiler, enjoy them all year round. Easy, tasty and healthy. Serve on fresh toasted Kaiser buns or just serve with a side salad. Can be served without mushrooms. Serves 6-8. 

1½ lbs. ground turkey (thigh meat is not as dry)

1 small finely chopped shallot

2 cloves crushed garlic

1 tbsp. finely chopped basil

1 tbsp. finely chopped cilantro

½ cup finely chopped spinach

¼ cup finely chopped red pepper

2 tbsp. Soya Sauce

1 tbsp. Worcestershire Sauce

½ tsp. salt

½ tsp. pepper

1 beaten egg

½ cup fine bread crumbs

¼ cup parmesan cheese

1 tbsp. butter

3-4 cups sliced fresh mushrooms

1 tbsp. fresh lemon juice

¼ tsp. Worcestershire Sauce

Salt and pepper to taste

  

In a large bowl, mix the ground turkey meat with all fresh herbs and vegetables. Add the soya, worcestershire, salt and pepper then mix well. Add the egg and combine well, then add the bread crumbs and parmesan cheese, stir and fold to incorporate all ingredients together. Wet hands with cold water and form meat mixture into 6-8 (½ inch) burgers. Broil burgers on medium high heat 4-6 minutes per side until no longer pink. cHeat butter in skillet over moderate heat, add mushrooms and sauté for 7-8 minutes until golden and no liquid remains. Add the lemon juice, worcestershire sauce and salt and pepper. Serve the mushrooms with the burgers.
